Meal Idea for Kids: Cheesy Broccoli Bites

Sometimes it takes a creative meal idea to get kids to eat vegetables, but these cheesy broccoli bites may be the solution at your next gathering around the table.  Our friends at Super Healthy Kids share the recipe:

With over 100% of the recommended amount of vitamin K and vitamin C per cup, broccoli is a super food!  As a bonus, broccoli is also a great source of folate, fiber (1 gram for every 10 calories!), and even protein.  If your kids aren’t keen on broccoli yet, making these little broccoli bites might be just the dish that turns them!

Our process wasn’t any more complicated than making pancakes.

We steamed some broccoli to soften it up.  We then blended it up in a food processor to mix it altogether (full recipe below). Then, we scooped up small balls of the “dough” and pan fried them till they were crispy.

These broccoli bites would make a great side dish, appetizer, or even just a snack!

Serve them plain or with a yogurt dip.

  • 2 cup chopped – broccoli, raw
  • 2 large – egg
  • 1/2 tsp – salt
  • 1/2 cup, crumbs – panko (japanese bread crumbs)
  • 1/2 cup – parmesan cheese
  • 2 tablespoon – olive oil


  1. Steam 2 cups of broccoli
  2. Add broccoli, egg, salt, panko or bread crumbs, and parmesan cheese to a food processor.
  3. Blend just till chopped finely.
  4. Using 1 tablespoon at a time, form into balls.
  5. Heat oil in a skillet.  Drop balls of broccoli mixture into pan.  Flatten with a spatula and cook until both sides are crispy.
