Monday Meal Ideas for Kids: Alligator Pear Salad


FACT:  Children burn hundreds of calories as they learn to read, write, solve arithmetic problems, and play every day.  It’s very important for them to eat the brain and body boosting foods they need to keep them going strong.   That’s why we’re our friends at Super Healthy Kids are sharing fun meal ideas for kids with the Reading Kingdom community!

Did you know avocados are also known as alligator pears?  If you think about it, it really does look like an alligator pear. Your kids may like this name better than ‘avocado’.

I don’t believe we’ve talked about avocado’s enough! Which is a shame, because we are currently addicted to this miracle fruit (or vegetable… I’m not picky about categories). Your kids’ health will benefit greatly from adding avocados to their diet!

Health Benefits of Avocados:

  • Contains heart healthy Oleic acid
  • The special carotenoids in Avocados were shown to inhibit cancer cell growth.  But when the carotenoids were isolated and tested, they did not inhibit cancer.  Which concludes that it is the WHOLE avocado that has the health benefits!  These carotenoids are fat soluble, so the fat in the avocado assists the delivery of the nutrients into the blood stream.  (source)

Anyway, let’s get to the avocado salad recipe:

Alligator Pear Salad

  • 2 cups corn kernels
  • 3 ounces walnuts
  • 2 ripe avocados (sliced and chopped)
  • 1/4 cup lemon juice
  • 1/4 cup light sour cream.

Mix corn, walnuts and avocados together.  In separate bowl, mix lemon juice and sour cream.  Add to mixture to the salad, stir and serve.  Tastes great chilled.
